Inovasi Pemberdayaan Masyarakat: Pembuatan Jelly dari Tanaman Lidah Buaya Sebagai Upaya Pencegahan Penyakit Diabetes

Lidah buaya (Aloe vera) diketahui memiliki potensi antihiperglikemik yang dapat membantu pencegahan diabetes mellitus (DM), namun pengolahannya menjadi produk yang mudah dikonsumsi dan diterima masyarakat masih terbatas. Pengabdian ini bertujuan mengembangkan jelly lidah buaya sebagai camilan sehat dan memberdayakan masyarakat Anyer, Serang dalam pengolahannya. Metode yang digunakan meliputi penyuluhan kesehatan, pelatihan dan demonstrasi pembuatan jelly dengan dua variasi perendaman (air kapur dan air cucian beras), pemeriksaan kesehatan (gula darah dan tensi), serta evaluasi melalui wawancara terstruktur terhadap lima responden. Hasil menunjukkan 80% responden lebih menyukai produk dengan perendaman air kapur karena tekstur yang kenyal, tidak berlendir, dan mudah ditelan. Pemeriksaan kesehatan mengidentifikasi 20% peserta dengan kadar gula darah tinggi dan beberapa memiliki riwayat keluarga DM. Sebanyak 80% responden berminat mengolah produk secara mandiri dengan ketersediaan bahan baku sebagai faktor kunci. Kegiatan ini efektif meningkatkan kesadaran masyarakat tentang pencegahan DM berbasis sumber daya lokal dan berpotensi dikembangkan menjadi usaha ekonomi kreatif.
